Christmas Mango Pavlova
Pavlova is good for any occasion, and I was going to make one for Christmas Day however a good friend had a bad accident so I took it over to them instead!
Stayed to taste it and it was delicious - although I had not tried it before, mango works very well with pavlova.
This is a recipe that I got from the plate I bake it on and these plates are now antiques - it is a no fail recipe, and if you ever see this plate, grab it!
Preparation Time: 10 minutes
Cooking Time: 1 ½ hours
Serves: 10
Ingredients
4 egg whites
225 g caster sugar
1 tsp vinegar
½ tsp vanilla
1 dstp cornflour
Oil to spray
250 ml whipping cream
Mango
Strawberries
Raspberries
Grapes
Method
Preheat the oven to 200°/180° fan forced.
Beat the egg whites with an electric mixer with a pinch of salt.
Gradually add the caster sugar, vinegar and vanilla, and beat until it is stiff.
Sift the corn flour and fold in gently.
Spray the plate or a shallow edged metal tray with the oil.
Heap the mixture onto the plate and smooth it out making it dip slightly in the middle.
Turn down the heat to 120°/100° fan forced and bake undisturbed for 1 ½ hours...no longer.
When it is cool, whip some whipping cream and add on the top.
Add whatever fruit you want and I used mango, raspberries, strawberries, and some small seedless grapes.
