Christmas is traditionally a time when we eat fruit mince pies.
Fruit mince pies were originally a British tradition and are usually eaten between Christmas and the New Year.
They are generally made with shortcrust or puff pastry, and it is a tradition to make a wish when eating your first fruit mince pie.
In this recipe, the fruit mince pie is crumbled to make a Tiramisu type sweet or dessert which can be made a day ahead.

Makes: 4 servings
Ingredients
Pack of 4 fruit mince pies
200 g fresh strawberries, cut into slices
1 tsp instant coffee
2 tbsp icing sugar
250 ml whipping cream
2 tbsp shaved chocolate, to decorate
Method
Add half the icing sugar to the sliced strawberries, and leave for about 10 minutes or until the sugar has dissolved.
Dissolve coffee in 2 tsp boiling water, and let cool. Whip cream meanwhile, plus the other half of icing sugar until soft peaks start to form.
When coffee has cooled slightly, add this into the cream and mix.
Break or cut the mince pies into small pieces and divide half of this and put it on the bottom of the sweet dishes.
Put half the coffee cream on top of these mince pies. Top with the strawberries.
Put remaining coffee cream and mince pie pieces on top of the strawberries.
This Tiramisu type dessert is now ready to serve.
Top with a bit of shaved chocolate (optional) just before serving.
