Chunky Vegetarian Chilli

This hearty vegetarian chilli con carne is a bit chunkier than usual, making it a great hearty meal that goes well with rice or a baked potato.

Preparation Time: 10 minutes
Cooking Time: 15 minutes
Serves: 8

Ingredients
400g tinned red kidney beans in chilli sauce
400g tinned tomatoes
400g tinned aduki beans
50g peas
100g broccoli heads
100g carrots
1 red bell pepper
1 onion
1 tbsp cornflour (optional, but will take longer without)

Method
  • Chop the pepper, onion, carrots, and broccoli.
  • Place all ingredients except the cornflour in a saucepan and allow to simmer for about ten minutes, stirring occasionally.

  • Stir in the cornflour rapidly until the chilli starts to thicken.
