Cinnamon Banana Bread
I am always looking for ways to cut out refined sugar and so I've been testing out lots of different kinds of sugar replacements in banana bread. The best option I've found so far is a natural alternative sourced from Xyltitol. It bakes like sugar and so can be used to replace it in a bread like this which gets a lot of its sweetness from the bananas anyway.

Makes: 8 servings
Ingredients
3 very ripe bananas
75ml vegetable oil a little more to grease the loaf tin
50g Xylitol
225g self-raising flour
2 tsp baking powder
2 tsp ground cinnamon
50g sultanas
Method
Preheat the oven to 180 Celsius
Lightly grease a smallish loaf tin (about 17 x 7 x 6cm). I find the easiest way to grease the tin is to use a silicon pastry brush and dip it in the oil.
Peel the bananas and put them in a large mixing bowl. Mash them well with a fork.
Add the oil and the Xylitol to the bananas and mix it all up.
Then add the other dry ingredients: the flour, baking powder, cinnamon, and sultanas. Mix this all together with a wooden spoon.
Put the mixture into the loaf tin and bake for about an hour in the centre of the oven. When it is risen and golden, and a skewer inserted into the middle comes out clean, then it is done.
Take it out of the oven and allow it to cool. Turn it out and slice it.
