The origins of French Toast are not entirely clear. One of the earliest versions of French Toast has been traced back to the Roman Empire. In France the dish is actually called Pain Perdu which means lost bread.

French Toast with Blueberry Sauce
Preparation Time: 5 minutes
Cooking Time: 10 minutes
Serves: 2
Ingredients
4 slices of thick white bread
4 eggs
1/2 teaspoon of cinnamon powder
1 teaspoon of vanilla extract
Cinnamon sugar for dusting
1 teaspoon of butter
1 teaspoon of rice bran oil or vegetable oil
1 punnet of blueberries
2 tablespoons of icing sugar
2 tablespoons of water
Method
To begin lightly whisk eggs with cinnamon and vanilla extract.
Cut bread into halves diagonally and dip in egg ensuring the bread is fully coated.

In a large fry pan add the butter and oil. The oil will help to stop the butter from burning.
Add the slices of bread and cook for about 1-2 minutes on each side until golden.
While the bread is cooking heat a small saucepan on medium heat and add in the blueberries, icing sugar and water.
Heat until the icing sugar has dissolved and berries are warm.
Take blueberries off the heat and pour into a blender with any liquid and blend until smooth.
When bread is golden on both sides sprinkle cinnamon sugar on to a plate and turn the bread on both sides.

Dip bread in cinnamon sugar
Place four pieces of bread on each serving plate and drizzle with the blueberry sauce.
