Cinnamon French Toast

Cinnamon French Toast

This is a healthy and deliciously warming French toast. There are no refined sugars or unnatural fats making it a positive breakfast or brunch choice. The sweetness comes from the compote made from just fruit, cinnamon and honey.



Preparation Time: 5 minutes
Cooking Time: 10 minutes
Makes: 1 servings

Ingredients
2 slices of grain sourdough
1 free range egg
1 tsp cinnamon
10-15 raspberries (fresh or frozen)
1/2 banana
1 tsp honey
Dash of unsweetened almond milk

Method

  • Crack an egg into a bowl and whisk with 1/2 tsp of cinnamon and a dash of almond milk.


  • Place the slices of bread into the bowl and allow to soak up the mixture, flip to make sure each side is coated.


  • Whilst the bread is soaking up the eggy mixture tumble some raspberries and the sliced banana into a small non stick fry pan.


  • Add a tsp of honey and the rest of the cinnamon and turn the heat on low.


  • Once the eggy mixture has been soaked up place the slices in a hot non stick pan.


  • Check on the berries and banana. The honey and berries should of started to bubble.


  • The bread should now be nicely browned on one side. Flip!


  • Once the other side is brown place the French toast on a plate and dribble the spiced fruit compote over the top.
