Cinnamon Rolls

This is one of my super hit recipes - cinnamon rolls.

Preparation Time: 40 minutes ( 2 hours to let the dough rise)
Cooking Time: 30 minutes
Serves: 8

1 egg
1/4 cup caster sugar
1 cup warm milk
1 tablespoon instant yeast
1 teaspoon salt
2 teaspoons vanilla essence
2½ - 3½ cups plain flour
60 g unsalted butter, softened

For Filling
2 tablespoons cinnamon powder
2 teaspoons cocoa powder
1 cup brown sugar
50 g butter

For Cream Cheese Icing
1/8 cup butter softened
2/3 cup icing sugar
60 gm cream cheese
1/2 teaspoon vanilla essence
1 tablespoon maple syrup
1-2 tablespoon milk

For Chocolate Fudge Sauce
(this recipe yields 3 cups)
1 1/2 cups caster sugar
1 cup unsweetened cocoa powder
1 cup whipping cream
1/2 cup butter
2 teaspoons vanilla essence
1/4 teaspoon salt

Mix egg, caster sugar, instant yeast, salt, vanilla essence, plain flour, and butter in a bowl and knead to a smooth and pliable soft dough. Dough should not be sticky. You may not use all of the milk so do not add all at once. Same goes with the flour, first add 2 ½ cups, then if you feel your dough is too sticky add some more.
Cover the dough and put it in the a warm place.
Let it rise until it has doubled in size.
Meanwhile make the filling by mixing cinnamon powder, cocoa powder and brown sugar in a bowl.
Once the dough has completely risen, punch it down and roll it into a big rectangular shape, neither too thick nor too thin. It is better if you divide the dough in two portions.
Spread soft butter all over the rectangular rolled dough.

Spread the brown sugar filling evenly, leaving a 2 cm border at the end.

Now start rolling it from the shorter side like a Swiss roll.

Use a sharp knife to cut the dough into 8, ¾ cm slices.
Grease a baking pan and put rolls in it. Leave a bit of space between each roll as the rolls will rise so will need more space.
Cover and let the rolls rise again until double in size - for about half an hour.

Bake in preheated oven for 15-20 minutes, depending on your oven settings.
Blend butter, icing sugar, cream cheese, vanilla essence, maple syrup and milk together to make cream cheese frosting.

To prepare chocolate fudge sauce, combine sugar, cocoa powder and cream in a sauce pan.
Stir it until completely combined and smooth.
Turn the heat to medium and stirring occasionally, bring it to boil.
Stir in butter and continue to boil until sauce starts to get thick, about 5 minutes.
Remove from heat, stir in vanilla essence and salt.

Frost cinnamon rolls immediately with cream cheese frosting and chocolate fudge sauce.

These rolls are best served warm. If you are planning to serve them later, microwave them for 30 seconds before serving.
