Citrus and Balsamic Coral Perch
A fresh and flavorsome fish dish.

Makes: 4 servings
Ingredients
Fish
4 x Coral Perch Fillets (or desired fish)
¼ cup Balsamic Vinegar
¼ cup Orange Juice
¼ cup Olive Oil
Garlic infused olive oil for drizzling
1 x Mandarin
Baking Paper
Salad
3-4 cups washed Mixed Salad Greens
1 x Cucumber, diced
3 x Mandarin, peeled and segmented
Method
Pre-heat oven to 180°C and cover an oven tray with baking paper. I use individual sqaures of baking paper for each fillet so I can easily fold the sides over to form a loose parcel.
Wash fish before laying fillets flat in the middle of the baking paper square. Drizzle fillets lightly with olive oil.
In a measuring jar pour orange juice, balsamic vinegar and olive oil, whisk until fully emulsified.
Cover fillets with the orange and balsamic dressing. Any remaining dressing can be drizzled over the cooked fish and salad prior to serving.
Lay 2-3 mandarin slices on the fillet.
Bring the edges of the baking paper together to form a parcel around the fish. Fold edges over 2-3 times to make them hold, or alternatively pierce at each end with a tooth pick.
Cook for approximately 20 minutes or until fish flakes easily with a fork.
While fish is cooking toss greens, cucumber and mandarin pieces together. Serve with orange and balsamic dressing.
Notes:
Head down to your local market and ask for a recommendation. It's a great place to get fresh, quality fish without breaking the bank.
Baking time may vary oven to oven. I cooked this in a very old oven, so sorry if the timing is out!
