Citrus Hummus

This is an absolutely healthy and delicious version of Hummus - making your own, rather than store bought is not only incredible value, but an opportunity to tailor it to the flavour balance YOU enjoy!

Preparation Time: 15 minutes
Cooking Time: 0 minutes

Ingredients
400g tin of chickpeas (washed thoroughly and drained)
1 tsp olive oil
Juice of 1&1/2 - 2 lemons (depending on your taste)
1/2 tsp cumin
1&1/2 tsp crushed garlic
black pepper to taste


Method
  • process chickpeas, oil and lemon together in a food processor.
  • add cumin, garlic and pepper and process again to combine.
  • taste and if too much lemon, add more olive oil! Use this step to adjuce the flavours to your palette if wanted.
  • Serve with chopped vegetables, chips, pita bread, as part of a greek salad plate, with falafels, yiros, in wraps- anything!!
