Citrus Tea Loaf

Producing a beautiful citrus smell when cooking in the oven, my take on a traditional tea bread has a refreshing flavour that goes well with lemon curd or melting butter when toasted. Perfect for filling that afternoon hunger, my citrus tea loaf has a springy texture, and pleasing colour created by the mix of fresh fruits.
Preparation Time: 1 hr 35 minutes
Cooking Time: 40 minutes
Makes: 1 loaf
Ingredients
500g wholemeal bread flour
½ tsp salt
7g fast action yeast
4 tsp sweetener (Truvia) or 75g caster sugar
75g margarine
3 eggs
1 tbsp ground cinnamon
298g tinned mandarins (175g drained)
75g sultanas
40g mixed peel
1 ½ lemons
1 lime
60g raspberries
Method
Mix the flour, sweetener/sugar, cinnamon, salt, and yeast together.
Zest and juice the lemons and lime, and add the zest to the mixture.
Drain the mandarin juice into the lemon and lime juice the add the mandarins to the mixture.
Add the remaining fruit to the mixture.
Beat together the eggs and margarine, and then incorporate it into the mixture.
Gradually add half the fruit juice to form a wet dough.
Knead the dough, and then place in a loaf tin.
Leave to prove for about an hour.
Bake in an oven pre-heated to 220 & #3872 ;C/ 200 & #3872 ;C fan/400 & #3872 ;F/6 G.
