Citrus Tea Loaf

Producing a beautiful citrus smell when cooking in the oven, my take on a traditional tea bread has a refreshing flavour that goes well with lemon curd or melting butter when toasted. Perfect for filling that afternoon hunger, my citrus tea loaf has a springy texture, and pleasing colour created by the mix of fresh fruits.

Preparation Time: 1 hr 35 minutes
Cooking Time: 40 minutes
Makes: 1 loaf

Ingredients
500g wholemeal bread flour
½ tsp salt
7g fast action yeast
4 tsp sweetener (Truvia) or 75g caster sugar
75g margarine
3 eggs
1 tbsp ground cinnamon
298g tinned mandarins (175g drained)
75g sultanas
40g mixed peel
1 ½ lemons
1 lime
60g raspberries

Method



  • Mix the flour, sweetener/sugar, cinnamon, salt, and yeast together.



  • Zest and juice the lemons and lime, and add the zest to the mixture.



  • Drain the mandarin juice into the lemon and lime juice the add the mandarins to the mixture.



  • Add the remaining fruit to the mixture.



  • Beat together the eggs and margarine, and then incorporate it into the mixture.



  • Gradually add half the fruit juice to form a wet dough.



  • Knead the dough, and then place in a loaf tin.



  • Leave to prove for about an hour.



  • Bake in an oven pre-heated to 220 & #3872 ;C/ 200 & #3872 ;C fan/400 & #3872 ;F/6 G.
