Classic Fat-less Sponge

I am 14 years old. I have always made my recipes from scratch and have never used a packet mix.

This classic sponge is very easy to make. It is also delicious. It can be made for any occasion. It is light and fluffy and very healthy being fat free.


Preparation Time: 20 minutes
Cooking Time: 17 minutes
Makes: 8 servings

2/3 cup wheaten cornflour
1/3 cup self raising flour
1 tsp cream of tartar
4 x 60g eggs
3/4 cup caster sugar

30g butter softened
125g cream cheese softened
1/2 tsp vanilla extract
1 1/2 cup icing sugar sifted
1/2 cup raspberries or strawberries

Preheat oven to 180C or 160C with fan.
Grease and line 2 x 22cm cake pans with baking paper.
Sift flour and cream of tartar into a bowl twice.

Break eggs into mixing bowl and add sugar.
Beat for 10 minutes with electric beaters at high speed until mixture is thick and creamy.
Sift flour over the egg mixture a third at a time and carefully fold into mixture with a metal spoon.

Divide the mixture evenly between the 2 cake pans.
Bake for 17 minutes.
Ease around the edge of the cake with a knife. *Remove cakes immediately from pans. Turn onto baking paper on baking trays or plate.

To Make the frosting
Put butter, cream cheese and vanilla in a bowl.
Beat for 2 minutes until smooth.
Add icing sugar and beat until combined.
Spread over one cake.
Add a layer of strawberries or raspberries.
Sandwich 2 cakes together.
Decorate and serve.

I hope everyone understands this cake isn't fat free. The term fatless refers to the lack of added butter or oil (fat). Egg yolks are very high in fat.
