Classic Muesli low cal

This is such an easy to make muesli recipe. Easy to make a big batch to last you a while - only 74kcal per serving, nutrient dense & perfect to pair with fruit and yoghurt for a quick delicious breakfast or snack.




Preparation Time: 10 minutes
Cooking Time: 15-20 minutes
Makes: 24 servings (1 serve = 1/4 cup)

Ingredients
3c corn flakes (gluten free if required)
2c puffed millet (puffed quinoa/rice can be used as well)
1/4c sunflower seeds
1/3c pepitas
1/2c almonds, roughly chopped (can sub slivered to save time)
1/3c shredded coconut
1 scoop vanilla protein powder (can omit if not desired - add 1tsp vanilla essence)
1/2tbs ground cinnamon
1 egg white
3/4-1tbs maple syrup or honey
1tbs coconut oil, melted (can sub olive oil)
1tbs water

Method
  • preheat oven to 180 degrees celsius
  • combine all dry ingredients in mixing bowl & combine
  • ensure protein powder/cinnamon distributed evenly



  • add wet ingredients & combine with hands/wooden spoon/spatula until evenly coated
  • line 2 baking trays & spread muesli to even sheet on trays
  • bake in oven for 10mins. Remove & toss muesli.



  • spread evenly & put back in oven for another 10mins
  • keep a close eye on muesli in last 10mins of cooking - muesli is done when crisp and golden



  • try not to eat all at once !!
