Classic Orange and Poppy Seed Cake
A delicious orangey textural loaf - the quintessential afternoon tea bake.
Whether at a picnic or an office celebration, this universally loved classic is always popular.
Smothered in citrus icing, it is highly unlikely you will be wrapping any left- overs for the following day!

Cooking Time: 35-40 minutes
Makes: 10 servings
Ingredients
125g butter, softened
3/4 cup caster sugar
1/2 tsp vanilla extract
finely grated zest of one orange
2 eggs
2 cups SR Flour, sifted
1 cup milk
2 tablespoons poppy seeds
Icing
11/2 cups icing sugar
juice of the orange
Method
Preheat the oven to 180 degrees C. Grease and line a loaf pan.
Cream the butter, sugar and vanilla extract until white and creamy.
Beat in the orange zest.
Add eggs one at a time, beating well after each addition.
Fold in the sifted flour and milk, alternately, in two batches. Mix gently until well combined and the batter is smooth.
Mix the poppy seeds through the batter.
Spread batter into loaf tin.
Bake for 35-40 minutes, or until an inserted skewer comes out dry.
When the cake is cool, make the icing. Mix icing sugar with enough orange juice until it is at a spreadable consistency. If it is too runny, add extra icing sugar, or too stiff, add more juice.
Spread evenly over the top of the cake and allow it to set before slicing.
