Classic Orange and Poppy Seed Cake

A delicious orangey textural loaf - the quintessential afternoon tea bake.

Whether at a picnic or an office celebration, this universally loved classic is always popular.

Smothered in citrus icing, it is highly unlikely you will be wrapping any left- overs for the following day!



Preparation Time: 20 minutes
Cooking Time: 35-40 minutes
Makes: 10 servings



Ingredients
125g butter, softened
3/4 cup caster sugar
1/2 tsp vanilla extract
finely grated zest of one orange
2 eggs
2 cups SR Flour, sifted
1 cup milk
2 tablespoons poppy seeds

Icing
11/2 cups icing sugar
juice of the orange


Method
  • Preheat the oven to 180 degrees C. Grease and line a loaf pan.
  • Cream the butter, sugar and vanilla extract until white and creamy.



  • Beat in the orange zest.



  • Add eggs one at a time, beating well after each addition.



  • Fold in the sifted flour and milk, alternately, in two batches. Mix gently until well combined and the batter is smooth.



  • Mix the poppy seeds through the batter.



  • Spread batter into loaf tin.



  • Bake for 35-40 minutes, or until an inserted skewer comes out dry.

  • When the cake is cool, make the icing. Mix icing sugar with enough orange juice until it is at a spreadable consistency. If it is too runny, add extra icing sugar, or too stiff, add more juice.



  • Spread evenly over the top of the cake and allow it to set before slicing.
