Classic Rocky Road

A fun, easy chocolate treat for all the family. My toddler loves helping me make this as he can really get involved and see the results of his work quickly.
For an extra gooey texture, add a table spoon of golden syrup to the cooled chocolate.

Preparation Time: 15 minutes
Cooking Time: 5 minutes
Makes: 20 servings

300g dark cooking chocolate
125g unsalted butter
200g shortbread biscuits
200g mini marshmallows
1tsp vanilla extract

Grease and line a cake tin with baking paper. I use a 20cm square tin.
Cut the butter into cubes and place in a saucepan and then add the chocolate, broken into pieces.

Cook over a low heat until melted. Stir occasionally to mix the butter with the chocolate.
Take off the heat and pour two thirds of the chocolate into a bowl and leave it to cool for 10 minutes. Leave the remaining third in the pan.

Break the biscuits up by placing them in a bag and hitting them with a rolling pin. Aim for a mix of large chunks and smaller pieces, avoid breaking the biscuits down into crumbs.

Once the chocolate has cooled, stir in the biscuits and marshmallows and add the vanilla extract.

Mix thoroughly to ensure all the pieces are well coated.

Spoon the mixture into the cake tin and spread evenly.
Pour the remaining chocolate over the top and cover evenly.

Place in the fridge and chill for at least two hours.
Once set, remove the rocky road from the tin and peel off the baking paper. Uses a warm knife to cut into chunks.
