Clementines are a hybrid citrus fruit between a mandarin and an orange. They are slightly more bitter than oranges and make a nice alternative in puddings. Based on the brands I used, each serving is about 382 calories.

Ingredients
3 clementines
1 lemon
50g raisins
200g wholemeal plain flour
100g margarine
90g Truvia sweetener (or 300g caster sugar)
2 eggs
150ml water
½tsp baking powder
Method
Pre-heat oven to 180 ༠C/ 160 ༠C fan/350 ༠F/4 Gas.
Cream the margarine and 30g sweetener/100g sugar together.
Zest one lemon and one clementine.
Beat the eggs and zest into the creamed mixture.
Fold in the raisins, juice, flour, and baking powder.
Zest and juice one lemon and two clementines, then heat in a saucepan with 150ml water and 60g sweetener/ 200g sugar, until dissolved into a syrup.
Divide ¾ of the syrup into four ramekins, then spoon the pudding mixture on top.
Bake in the oven, then leave to cool for ten minutes, before turning out, and pour over the remaining syrup.
