Clotted Cream Truffles

These melt-in-the-mouth truffles are incredibly easy to make and utterly delicious. They make a yummy treat or a lovely gift.

The perfect chocoholic treat!

Preparation Time: 2 minutes
Cooking Time: 3 minutes
Assembly time: 10 minutes
Chilling time: 7 hours
Makes: 25-30 truffles

200g 70% chocolate (I always try to get chocolate with chocolate nibs in, as it gives the truffles a nice crunch)
220g clotted cream
50g good quality cocoa powder

Break the chocolate into a Bain Marie or glass bowl over saucepan.

Melt over a low heat, stirring occasionally.
Mouthwatering chocolate aroma

Remove from the heat and add the clotted cream.

Stir the clotted cream into the chocolate until you have a smooth mixture.
Marble pattern whilst mixing

Cover and chill in the fridge for 3 hours.
Boil a little water and put into a ramekin or small bowl/cup.
Sprinkle the cocoa powder onto a plate ready for rolling the truffles.
Dip two teaspoons or a melon baller into the boiling water as this will help cut through the truffle mixture and mould it into shape.
Make a ball/oval shape out of the truffle mixture using the spoons or baller.

Roll the truffle in the cocoa powder, coating it fully and then set to one side on a plate.
Cover and chill for a minimum of 4 hours.
The truffles will stay fresh for 10 days when kept in the fridge (mine have never lasted that long though!).
Best served at room temperature
