Shirataki is the perfect meal for anyone on a diet. Unlike traditional noodles or rice, it is only about five calories per 100g, and based on the brands I used, this dish is only about 59 calories. The heat from the curry powder, should also speed up your metabolism, and it has the added bonus of being gluten free.
In Japan, shirataki means 'white waterfall', which describes the appearance of translucent noodles that are made from the konjac yam. Shirataki can also be made into frogspawn-looking rice by chopping it up more finely. Although it does not have much flavour by itself, it takes on the flavour of all the other ingredients beautifully.

Makes: 1 serving
Ingredients
150g Shirataki rice
3 slices red peppers
1 1/2 asparagus spears
40g cockles
1 tsp curry powder
2 tsp soy sauce
Method
Boil the rice in water for about 1 minute, then drain.
Chop the vegetables and mix them in with the rice.
Mix in the cockles and curry powder, and cook in a frying pan for a few minutes.
Add the soy sauce and serve.
