CocoAlmoNut Balls
I was struggling to come up with a name for these treats. They are not biscuits, they are not cakes, and they are not really anywhere in between either. They are, however, loaded with coconut and almonds, and they're round, so there you have, coco-almo-nut balls.
I actually made these entirely by accident after blundering up a cookie recipe. Everything was in cup measurements and a failed miserably trying to convert everything into grams.
Realising things were not going to plan, I improvised, making a few other changes here and there to see what I came up with. Coco-Almo-Nut Balls was the result, and quite a tasty one too.
Preparation Time: 1 hour
Cooking Time: 20 minutes
Makes: 56 servings
Ingredients
2 apples
250g porridge oats
125g ground almonds
250g desiccated coconut
125g raisins
250ml boiling water
250ml almond milk
80g quinoa
50g butter
Method
Leave the quinoa to soak in boiling water for twenty minutes, and then drain (retain the leftover water).
Peel, core, and chop the apples, then heat them in a saucepan with the leftover water. Stir occasionally until it becomes a puree.
Mix the apple puree and quinoa together.
Gradually mix in the remaining ingredients (you might want to divide the mixture into two more manageable portions).
Pre-heat your oven to 180 & #3872 ;C/ 160 & #3872 ;C fan/375& #3872 ;F/5Gas.
Use a tablespoon to scoop up the mixture and form into balls.
Place the balls on a baking tray and bake in the oven.
