Coconut flour is a great gluten free substitute for flour, however it is not the same as wheat flour in the way that you use it. For wheat flour I make cookies with 1 egg to 2 cups of wheat flour; and for these I use 2 eggs with only 12 tablespoons of coconut flour.

Makes: 15-20 cookies
Ingredients
12 tablespoons of coconut flour
10 tablespoons of Nuttelex
4 tablespoons of coconut palm sugar
2 eggs
6 tablespoons of peanut butter
Method
Preheat oven to 180 degrees celsius.
Cream the Nuttelex and sugar until creamy.

Cream the butter and sugar
Add in eggs and continue mixing.
Sift in flour and mix until well combined.

Sifting the flour
Roll into balls and place on a tray lined with baking paper.

Cookies ready to be pressed with a fork
Press gently with a fork.
Bake in the oven for 20 minutes or until lightly golden.
