Coconut and Macadamia Protein Balls
These home made are inspired two fold by my love for
Ferrero Rocher’s Raffaello Chocolates and
Bounce’s Protein Balls .
They taste amazingly similar to Raffaello Chocolates (only without the sugar and saturated fats) and unlike the Bounce version contain no stabilisers or agave, which is extremely high in fructose.
I’ll be serving these Protein Balls as an alternative to petite fours on Christmas day – a wonderfully guilt free way to finish off what will invariably be an indulgent Yuletide of food and drink.

Makes: 20-25 Protein Balls
Ingredients
1 Cup Macadamia Nuts
1 Teaspoon Sesame Seeds
1 Tablespoon Protein Powder (Vanilla Flavoured)
2 Tablespoons Rice Malt Syrup
4 Tablespoons Fresh Coconut Flesh or Coconut Pulp or Desiccated Coconut
2 Tablespoons Coconut Flour
1 Teaspoon Vanilla Bean Paste
1 Tablespoon Coconut Oil
Pinch of Sea Salt
Desiccated Coconut to roll the Protein Balls in
Method
Combine all ingredients into a food processor and blitz until thoroughly combined.
Combine all ingredients into a food processor and blitz until thoroughly combined into a paste.
Blitz the ingredients into a thick paste dont worry if the paste isnt smooth.
Take small batches of the mixture and shape into golf ball sized balls.
Roll the balls in desiccated coconut.
Refrigerate the Protein Balls and use as and when required. Or bundle a handful in some cellophane and give a healthy gift of food.
