Coconut Blueberry Banana Bread vegan

This coconut, blueberry and banana bread is incredibly moist and full of flavour. The coconut is the strongest player with hints of banana and bursts of sweet blueberry. The chia egg re-placer works great in this recipe and no one ever knows it's vegan.



Preparation Time: 10 minutes
Cooking Time: 60 minutes
Makes: 1 loaf

Ingredients
2 cups flour
1 cup coconut sugar or white sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 tbs chia seeds w 3 tbs water
2 ripe bananas
1/2 cup coconut milk
1/2 cup coconut oil
1 teaspoon natural coconut essence
1/2 cup unsweetened shredded coconut, plus extra to sprinkle on top
1 cup blueberries



Method
  • Preheat oven to 175°.

  • Combine the dry - flour, sugar, baking powder, baking soda and salt.

  • In a separate bowl, combine the wet - chia seed egg replacer, mashed bananas, coconut milk, coconut oil, and vanilla.



  • Mix dry ingredients with wet until combined. Stir through the shredded coconut and blueberries and pour into a greased loaf tin.



  • Sprinkle with shredded coconut and bake until the top is golden and a skewer inserted in the center comes out clean - about 1 hour.

  • Turn out onto a wire tray and cut into slices once cool.

  • Note: For the egg replacer soak 1 tbs of chia seeds with 3 tbs of water until it forms a gel, this equals one egg.
