Coconut Cashew Burfi
One of the very popular Indian traditional sweet is
, which is a regular feature during the festive period. It is quite easy to prepare at home as it requires very few ingredients. The cashew nuts add to the taste.

Cooking Time: 30 - 45 minutes
Makes: 10-12 servings
Ingredients
1 cup desiccated coconut
2-3 tsp ghee
2 cup milk
1 cup sugar
1/2 cup cashewnuts
1/2 tsp cardamon powder
10-12 raisins
Method
Heat some ghee in a pan, add desiccated coconut and stir it, till it turns light brown in color.

At the same time, grind the cashew nuts into coarse pieces. It would add to the taste of the sweet and make it crunchier.

Add milk, sugar, cardamon powder and grounded cashew nuts to the above coconut mixture and stir it continuously on the medium flame, till the mixture becomes little dry and begins to leave the sides of the pan. Ensure to stir the mixture constantly, so that it does not stick to the bottom of the pan.

Now transfer the entire mixture onto a greased plate and spread it evenly. Keep it aside for a while, to let it cool. You may also choose to keep the plate in the refrigerator for a short while.

Once the spread cools down and gets a little hard, cut them into square or diamond shaped pieces.
Decorate the barfi with raisin on top of it and it is now ready to be relished.
