Coconut Cashew Quinoa Salad
We've become a little obsessed with making this delicious vegan meal of late...
It is a meal packed with plant-based fats, iron, and protein - and we mean really packed! - so although it feels 'comfort food-y' and super satisfying, you can rest assured it is nutritionally sound.
Preparation Time: 5 minutes
Cooking Time: 25 minutes
Serves: 2
Ingredients
2/3 cup dry quinoa
2 cups drinking coconut milk
1/2 tsp ground turmeric
1/2 tsp ground ginger
3 cups fresh spinach leaves
1/3 cup raw cashew nuts
1 tbsp extra-virgin olive oil
black pepper, cracked, to serve (optional)
Method
Place quinoa, coconut milk, turmeric and ginger in a medium saucepan and bring to the boil. Stir and reduce to a gentle simmer, leaving to cook covered for 15 minutes.
Add the spinach to the pan and continue to cook for a further 5 minutes, or until the quinoa fluffy and spinach wilted.
Divide between two serving plates and top with the cashews and olive oil. Season with cracked black pepper if desired, and enjoy warm.
