Coconut Cherry Slice Layered with Home Made Mulberry Jam
If you like the flavour of coconut, this recipe is for you!
I had a jar of mulberry jam that I made when mulberries were in season, and decided to use the jam in a slice.
The recipe is made in four layers however it is not difficult to make and the end result is a rich coconut slice.
Preparation Time: 15 minutes
Cooking Time: 45 minutes
Makes: About 24 slices
Ingredients
100 g butter
3 eggs
220 g castor sugar
150 g flour

About ½ to ¾ cup mulberry jam (home made is nicer!)
150 g shredded coconut
80 g desiccated coconut
Method
Preheat the oven to 160° fan forced. Line a 28 cm x 19 cm shallow pan with baking paper.
Beat the butter and half the sugar with a mixer.
Add one of the eggs, beat, and add the flour, stirring or mixing on a very low setting.
Put this evenly into the prepared baking tin.
The dough is quite thick so try to spread evenly
Bake for about 20 minutes.
Spoon the jam over this cooked base, as evenly as possible.
My jam had large mulberries still in it
Put the drained cherries over the jam.
Beat the remaining eggs and sugar together (I used the same bowl that I mixed the egg and butter in). Add the two different coconuts to this mixture and stir.
Place this mixture over the cherries, making it as even as possible.
Bake for about 25 minutes or until the top is slightly brown.
Leave in pan till cool, and then slice, and serve.
Keep the leftovers in the fridge and they will last for ages if not eaten.
