Coconut Fried Chicken
For finger licking good chicken I've created a slightly more tropical take on a classic.This is a party-pleasing recipe, but I enjoy my coconut fried chicken with a small salad, or as a snack with a dip on the side.
Preparation Time: 5 minutes
Cooking Time: 20 minutes
Makes: 2 servings
Ingredients
2 Chicken breast fillets
25g plain flour
Tsp black pepper
Tblsp dessicated coconut
1 Egg
Pinch of salt
10 Fresh Thyme leaves

Method
Crack the egg into a tub add the coconut milk and whisk.
In a bowl of a similar size add the flour and all of the seasoning.
Slice the fillets and set up the flour and egg mixtures next to the plate of chicken - like a conveyor belt.
Pick up a fillet and dip into the egg mixture.
Continue along with the process and place in the flour bowl, ensuring an even coat. Repeat with each fillet.
Place each coated fillet in a frying pan of olive oil or place on a plate for future use.
If you're cooking the chicken straight away, carefully place in a frying pan of olive oil, warmed over a low heat.
Fry the chicken fillets for 10 minutes over a low heat, turning every 2 minutes.
Plate up and enjoy your coconut fried chicken.
The chicken keeps well for four days, and works well in burger buns, sandwiches, and salads.
