A quick, healthy and yummy treat to whip up!
Preparation Time: 10 minutes
Makes: 15 balls
Ingredients
1 1/2 cups unsweetened desiccated coconut
1/2 cup unsweetened desiccated coconut for coating
1 cup almond meal
4 tbsp extra virgin olive oil or coconut oil (if you can find it)
2 tbsp honey
Zest of one lemon
Juice of one lemon
1 tsp vanilla essence
Pinch of salt
Method
Place all ingredients in a bowl.
Mix well, the mixture will be moist.
Roll the mixture into small balls, the balls will be quiet delicate and may not roll into perfect balls, so be gentle.
Set balls aside in refrigerator until hard.
