Soft and chewy, these macaroons combine coconut, pistachios and lemon for something a little bit fancy. And the best part? They can be made in just a half hour.

Ingredients
80g pistachios
1 cup caster sugar
4 eggwhites
1 lemon, zest finely grated
3 ½ cups shredded or desiccated coconut
Method
Line 2 trays with baking paper.
Process pistachios in food processor until finely ground.
Using handheld beater, beat eggwhites and sugar together until thick and glossy.
Using a tablespoon, gently fold through lemon zest, coconut and pistachios.
Drop spoonfuls of mixture onto prepared trays, about 4cm apart.
Tip: Use an ice-cream scooper instead of spoon to ensure macaroons are uniform.
Bake for 10 to 15 minutes, or until macaroons are dry and lightly golden.
Dust lightly with icing sugar and serve or store in an airtight container to retain freshness for later.
