Coconut Pistachio Slice
This coconut slice is a nice delicious and healthy treat which is clean eating and raw vegan inspired.
Preparation Time: 10-15 minutes
Cooking Time: 30 minutes - an hour

Note: You will need a food processor
Ingredients
Base
2 tbs chia seeds
2 tbs sunflower seeds
1 cup of pitted dates
1 tsp of vanilla essence
1 scoop of chocolate protein powder
2 cups of shredded coconut
1/2 cup pistachio kernels
add water if needed
Filling
1 scoop of chocolate powder
1 tbs rice malt syrup
1/2 cup coconut milk
1/2 tbs vanilla essence
2 cups of shredded coconut
Method
Place all of your base ingredients into a food processor until they are a nice sticky base consistency (add water if you need to).
Flatten your base into a rectangular baking tray.
Clean your food processor and add all of the filling ingredients to it.
Once the filling is mixed, layer it on top of your base and then add some shredded coconut on top.
Place in the freezer for 30 minutes to half and hour and then take it out, cut it up and fall in love.
