Coconut Rice Pudding Mango
I recently was quite disappointed when I accidentally dropped a freshly purchased mango on the floor of the supermarket. So, it was completely mushy. But, after pureeing it was perfect with delicious vegan rice pudding :)
Short grain rice produces more starch than long grain which makes the end result sticky and perfect for pudding.
Preparation Time: 5 minutes
Cooking Time: 20 minutes
Serves: 2
Ingredients
1/2 cup rice (glutinous is best, next best is short grain)
400 mL (1 can) coconut cream
200 mL water
1- 2 Tbs sugar
1 mango
Dried coconut flakes to serve (optional)
Method
Place the rice, coconut cream, water and sugar in a medium saucepan.
Cover and bring to a boil, then lower the heat to low and leave to cook for 20 minutes.
Meanwhile, puree the mango in a food processor or blender.
Serve the mango with your rice pudding hot or cold and a few flakes of dried coconut.
