Coconut Rough Balls

Quick, tasty and healthy. A bowl, spoon, 5 ingredients, 10 minutes and you have delicious bliss balls.

These irresistible balls are great as snacks, for parties or eating while watching a movie. They are refined sugar, gluten and lactose free and can be made low FODMAP and nut free.

Coconut Rough Balls
Irresistible and quick coconut rough balls

Preparation Time: 10 minutes
Cooking Time: 0 minutes
Serves: 16

4 tbsp almond butter or peanut butter (tahini for nut free)
2 tbsp honey (maple syrup for low FODMAP)
2 tbsp cocoa powder or cacao
1 1/2 tsp vanilla essence (2 tsp if using peanut butter and tahini)
2 cups desiccated coconut

Put 1/2 cup desiccated coconut in a bowl, set aside.
In a bowl, stir the almond butter, honey, cocoa and vanilla essence until smooth.

The mixture will be smooth and glossy

Add 1 1/2 cups coconut and stir to combine.

The mixture will be sticky

Use wet hands to roll tablespoon sized balls.
Place in the reserved coconut and roll to coat.
Serve immediately. Place in the fridge to store or to make the balls harder, if desired.
