Coconut Tarts
This recipe for coconut tarts has been handed down family generations from an old recipe booklet, and remain a timeless favourite.
Quantity may vary ever so slightly due to the fact I have had to convert ounces into grams, which requires some rounding up of numbers.
Preparation Time: 20 minutes
Cooking Time: 15 minutes
Serves: 10
Ingredients
110g short crust pastry
55g margarine
55g caster sugar
55g desiccated coconut
½ egg, beaten
10 tsp raspberry jam
Method
Pre-heat the oven to 190 & #3872 ;C/ 190 & #3872 ;C fan/375 & #3872 ;F/5 Gas.
Cream together the margarine and sugar.
Beat in the half egg, and fold in the flour and coconut.
Roll out the pastry, and cut out cases with a cookie cutter.
Line the cases in greased tart/cup cake cake tins.
Brush 1 tsp jam in each.
Spoon in approximately 1 tablespoon mixture into each pastry case and bake for 15 minutes.
