Coconutty Sweet Potato Prawns
This started out as a vegetarian dish, and just seemed to evolve into something else entirely. Prawns, coconut and sweet potato are the basis for this dish.
Preparation Time: 5 minutes
Cooking Time: 40 minutes
Makes: 1 servings
Ingredients
1 Sweet potato
1 Garlic clove
100g Green lentils
150ml Coconut milk
5 fresh Prawns
1 chunk of Ginger
2 tblsp Honey
Black pepper
Lemongrass
Method
Wash the lentils thoroughly and boil in a saucepan of water for 30 minutes.
Peel the sweet potato and chop into chunks.
Add to the saucepan of lentils along with a pinch of black pepper and 1 tsp of lemongrass. Add the coconut milk and leave to cook on a low heat for 10 minutes.
Wash the prawns and add to the saucepan, stir and leave to cook for 5 minutes.
Grate the ginger directly into the saucepan.
Add the honey.
Stir and cook for 5 minutes.
Serve.
