When my dad comes home from work there are always two things he has: a cup of coffee and a banana. Now I've combined his favourite lunch into a delicious cake for pudding. Based on the brands I used, each slice is about 80 calories.

Makes: 16 servings
Ingredients
2 small bananas
50g Xylitol sweetener (or caster sugar if you prefer)
120g wholemeal self-raising flour
2 large eggs
1 tbsp instant coffee
3 tsp boiling water
1 tbsp lemon juice
35g dark soft brown sugar
50g light margarine
2 1/2 tbsp golden syrup
Method
Pre-heat the oven to 180 ༠C/ 170 ༠C fan/375 ༠F/5 Gas.
Beat the eggs and sweetener/caster sugar together.
Dissolve the coffee granules in the boiling water, then stir into the egg mixture.
Mash the bananas, then beat into the egg mixture.
Fold in the flour, then pour the mixture into a ring dish and bake in the oven.
Melt the margarine, brown sugar, golden syrup, and lemon juice in a sauce pan.
Pierce holes in the cake and pour the syrup over it.
