Coffee & Walnut Cookies

A simple cookie recipe, perfect for afternoon tea.

Preparation Time: 15 minutes
Cooking Time: 20 minutes
Makes: 6 servings

2 cups flour
1 cup walnut
cup sugar
tsp salt
2 tsp ground coffee powder
1 tsp vanilla essence
75g unsalted butter, softened cubed

Preheat oven to 180C, line a baking tray.

In a large bowl sift together flour, sugar and salt.

Sift in the coffee powder.

Chop the walnuts finely and combine with the dry ingredients. Reserve a few whole walnuts for later.

Add in the butter and using finger tips, knead the ingredients together until it resembles breadcrumbs.

Drizzle in the vanilla essence.

Add in the milk, fold the ingredients together until it comes together into a dough.

Wrap in plastic and refrigerate for 15 minutes or slightly chilled.

Roll tablespoonfuls of the dough into round balls.

Slightly flatten and place onto the baking tray.

Place a whole walnut in the centre and bake for 12 to 15 minutes or until golden.

Remove from oven and allow the cookies to cool before serving.
