Coffee Chocolate Custard Cake

A creamy cake made from chocolate custard hidden beneath a crispy, crunchy top! Great for a luscious dessert or treat.

Preparation Time: 20 minutes
Cooking Time: 40-60 minutes
Makes: 12 servings

1/2 cup butter
2 1/2 cups milk
1 cup plain flour
1/2 cup cocoa powder
4 eggs, separated
4 drops white vinegar
1 3/4 cups icing sugar
2 tablespoons warm water, plus 2 teaspoons of instant coffee
1 teaspoon vanilla extract


Preheat the oven to 160 C. Grease a slice baking tray.

There's a bit of prep to go into this dish to make it run smoothly. So here goes:

Melt the butter, then set it aside to cool slightly.

Warm the milk until it is lukewarm, then set it aside.

In a mug, combine the warm water and instant coffee to dissolve the coffee. Set this aside.

Whisk together the flour and cocoa powder, then set this bowl aside, too.

In a clean, dry mixing bowl, beat the egg whites and vinegar until they form soft peaks. Set this aside.

In another mixing bowl (this will be the main mixing bowl that all the ingredients are eventually mixed in), beat together the egg yolks and icing sugar until pale and creamy.

Into the egg yolk mixture, beat in the melted butter.

Add the coffee mixture and beat to combine.

Use a spoon to fold in the flour and cocoa mixture.

Use an electric mixer or whisk to whisk in the milk and vanilla until everything is combined.

Fold in the egg whites until all of the egg whites are folded in.

Pour the batter into the prepared slice baking tin.

Bake for 40-60 minutes, or until the top surface begins to crack.

Allow the cake to cool (on a wire rack, then in the refrigerator). Then slice it up.

Serve with cream or berries.
