Coffee Flavoured Cake With Crunchy Topping

This is a delicious cake, great for afternoon tea served with a cup of coffee. If you do not like the flavour of coffee, substitute 1 teaspoon of vanilla essence for the coffee essence and leave out the cinnamon. Any basic cake mixture can be substituted and if you wish you can add ¼ cup sultanas to a plain vanilla cake mixture. Have fun trying out your own variation on this recipe.


Preparation Time: 20 minutes
Cooking Time::About 50 minutes
Makes: 1 round cake 20cm in diameter
Servings: 8 serves

Ingredients
Topping:
55g melted butter (Margarine can be used but butter gives a better flavour.)
½ cup raw sugar
½ cup chopped walnuts
¼ cup rolled or quick oats

Cake mixture:
110 g margarine
110 g sugar
1 teaspoon cinnamon
1 tablespoon coffee essence or 1 tablespoon boiling water mixed with 2 teaspoons instant coffee
2 eggs
220 g SR flour
½ cup milk

Method
  • Mix all the ingredients for topping in a large bowl.

  • Mix the topping ingredients together

  • Line a round cake tin (20cm diameter) with foil and spray with cooking oil.
  • Press topping mixture over base of cake tin, using the bottom of a strong flat glass to level mixture.
  • Set aside.

  • Press topping mixture over base of tin

  • Cream margarine and sugar. You can use the same bowl used for making the topping.

  • Cream margarine and sugar.

  • Add the eggs one at a time and beat into creamed margarine and sugar.

  • Add the eggs

  • Add the coffee essence and combine with other ingredients.

  • Add the coffee flavouring

  • Fold in half the sifted flour and cinnamon and then add half the milk and mix.
  • Fold in remaining flour and cinnamon and then add remaining milk.
  • Mix well.

  • Mix well

  • Pour the cake mixture on top of the crunchy topping in the cake tin.
  • Level out using a spatula.

  • Pour cake mixture into tin

  • Bake at 180C for about fifty minutes.
  • Test with a skewer and remove from oven when skewer comes out clean.

  • Cake fresh from the oven.

  • Carefully remove from the tin immediately, with the bottom up.
  • Carefully peel off the foil and place on a plate with the crunchy side up.
  • Allow the cake to cool so the topping can set.
  • When set the topping is crunchy, a delicious contrast to the soft cake.

  • Enjoy with coffee
