Coffee Ice Cake
In seventeenth century Europe it was a common treat to have a slice of cake with your coffee, so it was only a natural progression that at some point the coffee would end up
in the cake.
The combination of sweet and bitter works extremely well, especially with the coffee icing. Coarsely ground almonds also add extra texture.
Preparation Time: 40 minutes
Cooking Time: 1 hour 15 minutes
Makes: 10 servings
Ingredients
175g margarine
250g wholemeal self raising flour
75g coconut sugar
250g icing sugar
125g whole almonds
3 eggs
1 tsp vanilla extract
4 tsp instant coffee
125ml boiling water
1 tsp baking powder
Method
Cream the margarine and coconut sugar together.
Beat the eggs in one at a time with vanilla extract.
Dissolve the instant coffee in boiling water and add half to the mixture.
Blitz the almonds in a food processor to the coarseness of breadcrumbs, and then stir into the flour and baking powder.
Fold into the mixture, then pour into a loaf tin and bake in the oven.
Mix the remaining coffee with icing sugar to form the icing.
Allow the cake to cool and then spread the icing all over.
