Colourful Couscous Salad
This salad is full of vegetables and herbs with lots of seasoning. This salad makes for a complete meal
Preparation Time: 30 minutes to fluff couscous and 5 minutes to mix the salad.
Cooking Time: no cooking
Makes: 2 servings
Ingredients
Couscous 2/3 cup
Water 2/3 cup
Seasoning
Turmeric 1/2 tsp
Garlic powder 1/2 tsp
Salt to taste
Pepper 1/2 tsp
Cinnamon 1/2 tsp
Vegetables chopped
Tomato
Bell pepper - green/yellow/red
Carrot
Zucchini
Onion
Avocado
Herbs, chopped
Parsley
Mint
Coriander
Baby spinach
Juice of 1 lemon
Chopped almonds and walnuts
1 tsp extra virgin olive oil
1/2 cup boiled chickpeas or beans (I did not have this)
Method
Take couscous in a bowl, a deeper one, add slightly warmed water.
Add seasoning like salt, pepper, garlic powder, cinnamon powder, turmeric powder. Mix well.
Leave aside for 20-30 minutes. After that use a fork to fluff up the granules. You will see the water is soaked up.
Add a platter of chopped vegetables to add colour and nutrients
Add chopped herbs like coriander, mint, parsley and some chopped almonds and walnuts. Add the oil and chickpeas.
Add lots of lemon juice. Mix well. Do a taste check and adjust salt, lemon, pepper.
