Cooked Australian Sardines with Baked Bread Roll stuffed with Chicken and Salsa

I love crisp Fremantle sardines, which are a very large version of tinned sardines, but fresh. They are difficult to buy as they are not always available however I found these frozen in a local fish shop.

I wanted something a bit different to serve with them, and I had a bit of chicken left over from another meal, so I cooked the chicken and made this delicious baked roll.

Serve it with a side salad to make a complete meal.

Makes: 1 - 2 servings

Fremantle sardines
Small egg
Bit of flour
1 tsp parsley, cut very fine
2 tbsp oil
¼ cup breadcrumbs
½ small shallot or onion

For the stuffed roll
1 crusty bread roll
1 cup chicken breast
¼ cup tomato salsa
30 g grated cheese
¼ cup sour cream
½ small shallot or onion
¼ cup corn chips

  • Cook the chicken by boiling it in water, or soup till just done (about 10 minutes and you could microwave if you prefer). When cool, cut or tear into small pieces.

  • Preheat the oven to 160° fan forced.

  • Cut the top off the roll and hollow out the inside as per the photo.

  • Mix the pulled chicken, salsa, and sour cream in a bowl. Add some pepper and salt (optional).

  • Push this mixture into the roll and ensure you get it in the edges/corners.

  • Crush the corn chips by putting them in a plastic bag and using your hands to crush them or you could use a food processor -do not make them too fine.

  • Mix the cheese, onion and corn chips together and carefully place on top of the chicken mixture.

  • Place the roll on some baking paper and bake for about 10 - 15 minutes.

  • While this is baking, dip the sardines in a bit of flour, egg, parsley and the breadcrumbs.

  • Heat about 2 tbsp oil in a small frypan, and add the onion.

  • After two minutes add the sardines on a medium/high heat for about 5 minutes on each side, or until sardines go brown and crispy.

  • Put the roll on a plate with the sardines and slightly browned onions.

  • Garnish with some parsley (optional), and serve.
