Cool Avocado and Coconut Smoothie
The creaminess of ripe avocado blends beautifully with the rest of the ingredients in this surprisingly sweet smoothie. Gluten free and vegan, this smoothie is the perfect breakfast, snack, or dessert. I've added optional chia seeds for a nutritional boost.

Makes: 2 servings
Ingredients
Half a ripe (soft to the touch), avocado
2 Bananas - 1 frozen
50ml Coconut milk
Tsp Chia seeds (optional)
Method
Scoop the avocado out of the skin and into the blender.
Add the unfrozen banana and pour in the milk.
Slice the frozen banana into chunks, and remove the skin.
Add the frozen banana chunks to the blender and blitz until smooth.
Top the smoothie with the chia seeds.
