Corn Fritter Smash

The corn fritter smash is named so because it has all the ingredients of corn fritters but is served in a more smashed style. Throw all the ingredients into a bowl for a breakfast that tastes like a corn fritter but is fresher and a breeze to make.



Preparation Time: 5 minutes
Cooking Time: 0 minutes
Makes: 2 servings

Ingredients
1 avocado
1 cup of corn
1 tomato
1 chilli
1 handful fresh coriander
1/2 lemon or lime
1/2 red onion
Handful of rocket
Salt and pepper to taste

Toast to serve

Method
  • In a bowl combine the corn, diced red onion, diced tomato, torn coriander leaves and sliced red chilli.


  • Dice an avocado and scrape it into the bowl. Cut the rocket and add it too, stir with a spritz of citrus juice until combined.



  • Tumble the corn fritter smash mixture onto toast and season well.



  • Enjoy this fresh, spicy and zesty meal for breakfast, brunch or lunch!
