Corn Fritters

These versatile fritters are delicious for anytime of the day. Use them as an alternative to the traditional sweet servings on Pancake Day or as an easy lunchbox or dinner treat. This recipe provides a simple no-fail fritter that becomes even more delicious when you vary the recipe to suit your taste or what's on hand in your fridge.

Versatile and delicious corn fritters

This recipe uses frozen corn for its convenience but you can easily substitute fresh corn or drained, tinned corn.

Preparation Time: 10 minutes
Cooking Time: 10 minutes
Makes: 4-6 servings

1 cup corn kernels
1 cup plain flour
1 teaspoon baking powder
2 eggs
¼ cup milk
1 tablespoon minced garlic
1 small salad onion
2 shallots (green onions)
Pinch salt/ pepper (optional)
1 teaspoon chili flakes
1tablespoon rice bran oil

Sift the flour, baking soda, salt and pepper into a large mixing bowl.

In a separate bowl, whisk together the eggs, milk, garlic and chili flakes. Slowly add to the flour and gently stir until just combined.

Finely dice the onion and shallots.

Fold the onion, corn and minced garlic into the batter. Do not overmix.

Add the oil to a heavy bottom frying pan and heat pan until hot.

Add spoonfuls of the batter to the hot pan. Gently flatten the mixture to ensure even cooking.

Cook until golden brown, turn over and repeat on other side.

Serve with fresh avocado and baby spinach and rocket salad. Or add fresh tomato salsa .

Make mini versions to serve as cocktail food or for a children’s party

Mini corn fritters with tomato sauce and aioli

Add capsicum, grated zucchini or carrot
Add frozen peas or chopped spinach
Add fresh herbs
Add finely diced bacon. Cook bacon before adding to the batter.
Ramp up the spice by adding diced jalepeno peppers.
