Corn Mini Quiches

Here's a quick & easy mini quiches for kids' after school snack or breakfast for the family.



Preparation Time: 10 minutes
Cooking Time: 15 minutes
Makes: 6 servings

Ingredients
6 slices bread, crusts removed
butter, for spread
125g can corn kernels, drained
1/3 cup coarsely grated cheddar
4 eggs, lightly whisked
dried parsley leaves

Method
  • Preheat oven to 160°C.

  • Use a rolling pin to gently roll out bread slices to 5mm thick. Brush each bread slice with the butter.



  • Line six capacity muffin pans, buttered-side down, with the bread slices. Arrange the corn and cheese evenly among the muffin pans. Pour the egg evenly among each pan.



  • Sprinkle dried parsley leaves. Bake in preheated oven for 15 minutes or until just set and lightly golden.



  • Remove from oven and set aside to cool slightly. Serve warm.
