Corned Beef Sweet Hash
I put a twist on the hearty British classic, corn beef hash. This healthier version uses sweet potatoes and has a tiny bit of heat to it.

Cooking Time: 1 hour 14 minutes
Makes: 2 - 4 servings
Ingredients
2 x 340g tinned corned beef
1 x 260g tinned sweetcorn (drained)
100g frozen mash potato
4 sweet potatoes
2 tsp dried basil
1 tsp dried parsley
1 tsp parmesan
¼ tsp chilli flakes
½ onion
1 garlic clove
80g butter
Method
Mix together the corn beef, sweetcorn, herbs, and chilli flakes.
Peel the sweet potatoes and steam them over a pan of boiling water for about ten minutes, along with the onion.
Preheat the oven to 180 & #3872 ;C/ 160 & #3872 ;C fan/375 & #3872 ;F/5 Gas.
Blitz the sweet potatoes, onion, garlic, and margarine in a food processor.
Mix the mashed sweet potato into the corn beef.
Defrost the frozen mash potato in the microwave for about 4 minutes, and then add to the mixture.
Put the mixture into a baking dish and sprinkle over parmesan.
Bake in the oven for about one hour.
