Cornish Pasties

Cornish pasties are a real crowd pleaser. They are perfect for dinner or lunches.

Preparation Time:15 minutes
Cooking Time: 60 minutes
Makes: 8 servings

500g mince
1 onion
2 cups of peas, carrots & corn
1/2 zucchini
1 small potato
2 tsp crushed garlic
1 tsp chilli flakes
1 tbs cornflour
1/2 cup beef stock
2 tbs worcestershire sauce
2 tbs tomato sauce
1 tsp curry powder
1 tsp dried parsely
4 sheets of puff pastry
1 egg, beaten
salt & pepper
olive oil

Cut up all your vegetables into small cubes.

In a pot of boiling water, cook the vegetables.

In another saucepan, saute the onions, garlic and chilli in the oil.

Add the minced meat and cook until browned.

Serving Suggestion.

To the mix add the curry powder, parsely, beef stock, tomato sauce and worcestershire sauce.

Simmer until the sauce starts to thicken. To thicken the sauce further make a paste in a cup with your cornflour and gradually add to the mince mix.

Once the sauce is thickened, add the vegetables and salt and pepper.

Serving Suggestion.

Allow the filling to sit and cool. (Leaving it in the fridge over night will make it easier to assemble the pasties).

To assemble the pasties, cut the pastry in half.

Spoon 2 tbs of the mince onto the pastry.

Serving Suggestion.

With a brush, coat the edge of the pastry with the beaten egg and then fold into a parcel.

Grease an oven tray and arrange the pasties. Brush the pasty with more egg wash and put in the oven.

Bake in the oven for 25 mins or until brown and flaky.

Serve with mashed potato and vegetables or eat it by itself with tomato sauce.
