My mother used to make a similar dish to this and I have always loved it. It is SLIGHTLY sweet though can still be eaten with other savoury foods, however I love to eat it on its own.
You could add chopped apples before cooking, which is what my Mum used to do.
This is a great party food and can be served cold or hot, or sliced into squares for a buffet.
Preparation Time:15 minutes
Cooking Time: 65 minutes
Serves: 3
Ingredients
225 g wide egg noodles
2 eggs
125 g cottage cheese
110 ml sour cream
2 - 4 tbsp sugar
Juice of ¼ lemon
¼ cup raisins or sultanas
Bit of butter
2 tbsp cornflakes, crushed
2 tbsp ground almonds
Method
Boil the noodles as per packet instructions. Rinse and drain.
Preheat the oven to 180°/160° fan forced.
Beat the eggs, add the cheese, sour cream, sugar, lemon juice, raisins, and a bit of salt if required. I lined a Corning Ware dish with baking paper and mixed it in there so as not to dirty a dish! If not using baking paper put some butter in your ovenproof dish to grease it.
Fold the cooked noodles into this mixture.
Top with the corn flake crumbs and almonds, and put about 2 tbsp butter on the top.
Bake until the top is brown -about 55 minutes.
