Country Pumpkin Curry
This creamy pumpkin curry is deliciously sweet yet spicy all at once. It's sure to make your taste buds dance.

Serves: 6
Ingredients
1.2 kg butternut pumpkin
1 onion
1/2 cup thickened cream
2 tsp curry powder
1/2 tsp chilli powder
salt and pepper
oil for frying
Method
Peel and deseed the pumpkin then cut it into large cubes. Peel and dice the onion.
Heat a small amount of oil in a frying pan to medium heat. Gently cook the onions until the onions have softened which should take about 5 minutes.
Add the pumpkin and cook for a further minute.
Add the spices to the pan and stir to coat the pumpkin. Lower the heat, cover the pan and let cook for 10-15 minutes, stirring occasionally until the pumpkin has become tender.
Stir through the cream and let simmer for 5 minutes before serving on a bed of rice.
This recipe can easily be halved.
