Couscous and Almonds with Haloumi

Couscous is very versatile as you can virtually add anything to it - in this instance I added some sweetness to the savoury by introducing some chopped dates in with the mint and almonds.

Preparation Time: 10 minutes
Cooking Time: 10 minutes
Makes: 4 servings as accompaniment

Ingredients
150 g couscous
185 g boiling water
25 ml lemon juice
30 ml olive oil
½ tsp cumin
35 g dried dates
40 g slivered almonds
¼ cup fresh mint
1 packet haloumi cheese, sliced thickly

Method
  • Pour the boiling water over the couscous, cover and let stand until the liquid is absorbed.

  • Fluff with a fork once or twice, and it should be done in about 5 minutes.

  • Chop the mint and dates.
  • Chop to about this size


  • Mix the lemon juice, oil and cumin in a screw top jar or similar, and shake to mix well.

  • Add the juice/cumin mixture, dates, mint and slivered almonds to the couscous, and mix gently.


  • Heat a tiny bit of oil in a frypan or use a fat free one with no oil, and add the sliced haloumi.


  • Cook until it is brown on both sides. This will take about 10 minutes.

  • Serve the couscous with the haloumi on top.
