Couscous and Almonds with Haloumi
Couscous is very versatile as you can virtually add anything to it - in this instance I added some sweetness to the savoury by introducing some chopped dates in with the mint and almonds.
Preparation Time: 10 minutes
Cooking Time: 10 minutes
Makes: 4 servings as accompaniment
Ingredients
150 g couscous
185 g boiling water
25 ml lemon juice
30 ml olive oil
½ tsp cumin
35 g dried dates
40 g slivered almonds
¼ cup fresh mint
1 packet haloumi cheese, sliced thickly
Method
Pour the boiling water over the couscous, cover and let stand until the liquid is absorbed.
Fluff with a fork once or twice, and it should be done in about 5 minutes.
Chop the mint and dates.
Chop to about this size
Mix the lemon juice, oil and cumin in a screw top jar or similar, and shake to mix well.
Add the juice/cumin mixture, dates, mint and slivered almonds to the couscous, and mix gently.
Heat a tiny bit of oil in a frypan or use a fat free one with no oil, and add the sliced haloumi.
Cook until it is brown on both sides. This will take about 10 minutes.
Serve the couscous with the haloumi on top.
