Couscous with Pistachio Nuts Olives and Currants

Couscous is made of crushed durum wheat semolina, and is a very versatile grain which requires no cooking.

It can be mixed with many things to make an interesting accompaniment to a meal, or can even be eaten on its own.

You could also add cut up cooked vegetables, which would make it even healthier.

Preparation Time: 10 minutes
Cooking Time: 5 minutes
Makes: 4 servings

Ingredients
1 cup couscous (I used corn couscous)
Up to ½ cup of shelled pistachio nuts
Up to ¼ cup green olives, sliced
Zest of a lemon
A few tbsp currants
Fresh coriander to serve

Method
  • Heat the oven to medium and cook the pistachios on a tray for about 5 minutes.

  • Chop them roughly.


  • Pour about one cup (plus a tiny bit) of boiling water on the couscous and leave to stand for a few minutes.
  • The water should be absorbed in about 3 minutes


  • Add the pistachios, sliced olives, and lemon zest, and mix.

  • Then add the currants, salt and pepper, and mix well.


  • Add as much coriander as you want to the top -I grow coriander in my garden and did not have a lot!

  • Serve while still warm.

  • Can also be eaten the next day at room temperature.
