For this recipe I bought both fresh crabs and some crab meat (not the tinned variety), both available from Woolworths online. If you do not want to go to this expense, buy a tin of crab meat which is much cheaper, however not as nice!
Preparation Time: 15 minutes
Cooking Time: 10 minutes plus 30 minutes fridge time and about 20 minutes if using fresh crab
Makes: 2 servings
Ingredients 200 g crab meat, flaked
Bit less than ¼ cup Panko breadcrumbs
Spring onion (as much as you want) -I used 2 tbsp
3 tbsp Prawn and Crab dip, or plain mayonnaise
½ tsp Worcestershire sauce
½ tsp dry mustard
Bit of onion powder
Dash of hot sauce (optional)
Rolls for hamburger - I used brioche rolls Slice of cheese (optional)
Lettuce - I used Mizuna

Place the crab in a bowl and add the mayo or Prawn and Crab dip, the bread crumbs, spring onions, Worcestershire sauce, mustard, onion powder and hot sauce in a bowl.
Mix it all together and put in the fridge for half an hour or so. You COULD use a very small beaten egg, or half a beaten egg, and it will hold together better. If you do this, you may have to add some more bread crumbs if the mixture is too liquid.
Meanwhile make the claws by cutting two strips off the red capsicum and cutting a "V" out of one side. Make sure you make the strip with the indentation in the middle as per the photos.
Heat some oil in a fry pan, form the crab into large rissole type shapes and fry for a few minutes on each side or until they are brown.
Meanwhile, toast a piece of cheese on one side of the roll, and I put a bit of mayo on the other side - both optional).
Assemble the burgers by putting the crab cakes on one side, and adding whatever salad you want.
Put the lid of the roll on top.
Add the olives for the eyes, and the cut red capsicum for the claws!
I served it with a hash brown and broccoli salad, with sweet chilli dressing.
The next day I had a crab rissole with leftover broccoli salad and dip, together with some chopped fresh pineapple.
